(Wild Ferment Chardonnay) is Charlie’s creation starting from our 2008 vintage Chardonnay. The idea of using the Chardonnay to make two barrel’s in oak, quickly sparkled the idea of a wild ferment, (that is; not adding any cultured yeast) which was a common family tradition. Because of a great following we now make it a regular tradition for God’s Hill.
After 9 month of careful observation and tasting, the SELVAGGIO has really created itself to an amazing personality oozing aroma and complexity of flavors such as; cashew, Monte Carlo biscuit, toasty, nutty and fruit flavor of ripe loquat.
This unique and stunning wine can be enjoyed now or in years to come.
